Ask Y'All Anything: Snappy Breakfast Ideas

I've been on this kick lately where I try to eat a decent breakfast, since "breakfast is the most important meal," as the infamous they keep telling me. I think it's true, though -- for the most part since being diligent about morning sustenance, I find myself a happier, more productive person when I eat a good breakfast. I don't get cranky, I work with more focus and life is just better overall. Yay, breakfast! But lately I find myself falling into the "yogurt-with-fresh-fruit-and-almonds" rut. It's not a bad rut to be in (especially since I discovered the amazingness that is Icelandic skyr recently. Skyr = YUM.) But ruts are still ruts. So, anyone out there got some kicky little breakfast ideas and recipes out there that aren't breakfast cereal or yogurt-based? What breakfast meals keeps you happy and zooming along in your life like a cheerful little bee?

okay, this is what i do: take some of those mixed grains you can get at trader joe's (it comes in a canister and has, like, barley and rye and some other stuff), cook it up in water till the grains are chewy and NOT MUSHY (ewww to mushy grains!!!). then in a separate pan, i fry up (in olive oil) a little bit of broccoli and baby bella mushrooms and red pepper and red onion, and then (in its own corner of the skillet) a nice little egg (over-medium). then i grind up a tiny bit of flaxseed in a coffee grinder. then i take the grains, the happy veggies, the egg, and the flaxseed and i mix them all up together in a bowl. but before the mixing i add some sriracha and sea salt and black pepper. IT IS SO GOOD. i'm so happy to have invented it. let's call it 'barKER's magic egg surprise.'

oh and after that i drink a big mug of earl grey tea with soymilk and raw honey. (choice organic tea, two bags.)

for my breakfast this morning, i cooked oats in lightly salted water (1:2 ratio) with a small apple chopped into big pieces. once the oats had cooked and the water was mostly gone, i added a bit of butter and sugar/cinnamon, though i would have used maple syrup if i'd had it. you could probably also add some milk instead of butter.

mmmmmmm, this sounds good! good job, barKER!

oh, i totally forget about oats! it's definitely oatmeal weather these days, i will have to try this.

I cut up a sweet potato (or two) and fry it in olive oil with paprika, salt, thyme, a dash of cinnamon, and a sprinkle of sugar. So good.

I make my own special tomatillo salsa (it's a simple recipe, and you can keep it in your fridge all week for snacks). I add my own special salsa to a variety of foods such as tacos, arepas, quesadillas. Usually this includes pinto beans that I make from dried beans (not canned) - to which I add spices and garlic to my liking. Of course this has to be done overnight, but it's well worth it. It really makes all the difference to use quality ingredients. And these ingredients just go the extra mile. They are cheap and healthy and can be used for so much. Cheese is important to me, too. I love to try different kinds for different purposes, but queso blanco, queso fresco and oaxacan cheese are best for a Mexican style breakfast. Eggs are usually involved too. I've been trying to use coconut oil lately because it is better for cooking in high heat- yes, even better than olive oil (for many reasons, google it!) Olive oil should not actually be used for high heat and frying. This may all sound complicated, but try having ingredients like these around your house and see what you can up with and you will surely be pleased! For fruit, I LOVE papaya (it's easy to pick up PAPAYA CHUNKS instead of cleaning the fruit). They are so delicious and healthy and refreshing. Watermelon is the coolest fruit on the planet to me right now, it stands alone. I love making smoothies too - Hawthorne Valley yogurt (in NY- all the way!), with frozen fruit- it's that simple (and drinkable!). All of this is GREAT for starting the day. All the food groups, all the nutrition and you can pack it in your lunch if you're on-the-go. It's a huge money-saver too!

I love oatmeal (the longer it takes to cook, the better it is for you) especially with some chopped fruit - apples always go well. I'll sprinkle it with some brown or raw sugar, a little cinnamon, and sometimes a tiny bit of nutmeg and cloves.

On days when I don't have as much time, I'll make a peanut butter and jelly (or mashed banana, or honey, etc.) sandwich on whole wheat bread and grab a piece of fruit.

Sometimes, I'll bake a healthy cake (like an apple cake with whole wheat flour and a proportionately small amount of sugar - no birthday cakes here!) and eat that in the mornings for a week. Bread pudding is yummy too if you're going to bake ahead - not necessarily the healthiest, but if you'll eat French toast, it's the exact same concept, just easier to prepare ahead of time and eat for a few days.

Scrambled eggs with salsa and cheese is also a favorite!

I used to make homemade sausage when I was on a diet. The patties freeze well, and can be stored in Ziploc freezer bags. If you don't want to make them yourself, you can buy ready-made sausage that you can cook yourself. The reason I prefer mine is there is no sugar in it and I can adjust the spices to suit me.
